4 ounces whole wheat pasta -- 1 1/2 cups
2 tablespoons balsamic vinegar
2 teaspoons extra virgin olive oil
1/4 cup basil, fresh -- chopped
1 1/2 cups tomatoes -- chopped
8 ounces chicken breast half without skin -- cooked and chopped
1 tablespoon fresh parmesan cheese -- grated
1 clove garlic -- minced
salt and pepper -- to taste
Cook pasta according to package directions. Drain.
Whisk balsamic vinegar and oil. Add all other ingredients except cheese to dressing and combine.
Return mixture to pasta pot and heat on low until just hot or serve at room temperature. Sprinkle with fresh parmesan cheese.
